Food for the Soul
,With frigid temperatures and short days, we tend to navigate towards rich and sugary foods. Holiday time seems to be a big wave of cookies, cakes and all kinds of treats. I hear from my clients how the break rooms at work are filled with treats every day. Now that is past the beginning of January, it is time to realign our food choices. In order to warm up my body and soul, I started to cook more soups. Instead of going for the classic chicken noodle soup which we all like in my family, I decided to go for an all vegan recipe – see below. I’ll leave the chicken noodle for some other time, especially since no one is sick.
Lentil soup is very flavorful, makes my house smell good and is pretty easy to make. It also tends to fill me up quickly. I usually soak the lentils for a good 4 hours and that makes the cooking time shorter. I rinse them well before adding them to the pot. I hope you enjoy my recipe as much as I do!
