A Refreshing Summer Dessert: Raspberry Mousse
,The other day I realized my sweet tooth was asking for something fruity, but not just plain fruit…something refreshing and different. So I remembered I had some extra raspberries in the fridge and how my Grandma use to make this delicious mouse (we called it “foam”) out of raspberries or strawberries. So here you go!
INGREDIENTS
- 1/2 cup raspberries
- 1/2 cup sugar (powder sugar works better)
- 1 egg white*
- 1/4 teaspoon cream of tartar (optional)
- Extra raspberries or mint leaves for decorating (optional)
In a deep bowl mash the raspberries, add sugar and mix well. Then add the egg white and fluff with the mixer until it firms up. You can add the cream of tartar to make it firm up faster. When the mouse starts forming into peaks (it may take up to 5 mins) it means it is ready. Put it in cups and decorate it with raspberries and mint. This makes about 4 servings. Refrigerate for one hour or eat it right away!

*keep in mind this recipe has raw egg whites, make sure you have fresh eggs, you assume the risk…kind of the same when you make the classic tiramisu recipe; I have never had a problem consuming it, but everyone is different, so be cautious. One more tip: you can make powder sugar in the blender (NutriBullet) using the regular granulated sugar.
